Easy Diabetic Recipe – Glazed Fruit Snacks

Because you are pre-diabetic or have been diagnosed with Diabetes 2 you carefully monitor what you eat, being especially careful about your calories, carbohydrates, sugars, and fats.  At the same time this does not mean that you can no long enjoy some of your favorite foods.  It only means that you will need to become more creative in how these foods are prepared.

Following is a recipe for “Glazed Fruit Snacks” and I’ve also listed the nutritional information and Dietary Exchange. Enjoy!

Glazed Fruit Snacks

Ingredients:

1 cup fresh blueberries

1 cup fresh sliced strawberries

1 cup peeled and sliced peaches

1 1/4 cup preserves, blackberry, light, seedless, sugar free

1 1/4 cup low sugar, orange marmalade

2 tbsp fresh lemon juice

1 tsp fresh lemon peel, grated

Protein:    0.6 g

Carbohydrates: 15.9 g

Total Fat: 0.2 g

Sugars: 9.3 g

Cholesterol: 8.4 mg

Sodium: 0.6 mg
